Favourite Dhal Recipe
Delicious and warming on a cold February day, serve with a dollop of yoghurt and chopped fresh coriander and a warm flat bread
Ingredients
1 tablespoon coconut oil
3 crushed garlic cloves
1 chopped onion
2 teaspoons turmeric
1/2 teaspoon ground coriander
1/2 teaspoon cinnamon
1 teaspoon curry powder
2 cups red lentils
600 ml vegetable stock
1 tin coconut milk
Method
Cook the chopped onion in the coconut oil until soft, add the chopped garlic and cook for a few minutes. Add the spices and warm through. Add the lentils, vegetable stock and coconut milk and cook gently until the lentils are soft, about 15-20 minutes. Season to taste and add a little brown sugar to serve
