Cherry Fudge Crumble
May is the time for fresh cherries and it is a short season so make the most of them whilst they are available
This delicious crumble is made with an oat topping giving it a flapjack like texture!
The only faff with fresh cherries is de-stoning them, but it is really worth the effort
Ingredients
- 750g fresh cherries, stoned
- 150g butter
- 150g demerara sugar
- 150g porridge oats
Method
- Put the stoned cherries in an ovenproof dish
- Melt the butter in a saucepan, and stir in the sugar and oats
- Spread this mixture over the cherries
- Bake in a moderate oven – 350 degrees F, 180 degrees C, Gas 4 for 30 minutes
- Then either increase the oven temperature for the last 5 minutes of cooking or place under a heated grill to just toast the top of the pudding
- Serve warm with cream or ice cream
