May is the time for fresh cherries and it is a short season so make the most of them whilst they are available

This delicious crumble is made with an oat topping giving it a flapjack like texture!

The only faff with fresh cherries is de-stoning them, but it is really worth the effort

Ingredients

  • 750g fresh cherries, stoned
  • 150g butter
  • 150g demerara sugar
  • 150g porridge oats

Method

  • Put the stoned cherries in an ovenproof dish
  • Melt the butter in a saucepan, and stir in the sugar and oats
  • Spread this mixture over the cherries
  • Bake in a moderate oven – 350 degrees F, 180 degrees C, Gas 4 for 30 minutes
  • Then either increase the oven temperature for the last 5 minutes of cooking or place under a heated grill to just toast the top of the pudding
  • Serve warm with cream or ice cream
